Krumkake (Norway) Ingredients: 4 eggs 1 cup sugar ½ cup margarine* 2 Tbsp corn starch 1 ½ flour ½ tsp vanilla or ½ tsp cardamom seed *don't use more than ½ cup and don't use oil as a substitute NOTE: A special Krumkake Iron is needed to prepare the krumkake. Preparation: Beat eggs lightly. Add sugar and beat lightly. Do not over beat. Add cooled melted margarine and flavoring. Sift flour and corn starch and add to egg mixture. Dough will be sticky enough to be dropped by spoon. Preheat grill for 7-8 minutes with grids closed. Place a heaping teaspoon of batter in the center of each grid pattern to make full size krumkakes. Bake until golden brown. Baking time is ½ minute, but will vary slightly with personal preference for browning, consistency of batter, and size of krumkakes. Roll one krumkake on the cone roller immediately while the second one stays hot on the grid. With krumkake still in the roller, press roller on the overlap for a few seconds to form a smooth seam. Krumkakes can be rolled onto a straight roller, if desired. The roll or cone can be served plain or filled with whipped cream. Recipe by Sigrid Viswanathan.
